This weekend, Mila and I celebrated 5 years of life together! As a single parent, every year that I make it alive with a sane mind, I am grateful. Every birthday of Mila’s is also a celebration for me that I made it another year. I remember the early years with Mila when I used to struggle working all day, rushing to get some one-on-one time with her before bed and then praying that she sleeps through the night so I wouldn’t be exhausted the next day. In those early months, I couldn’t even imagine me making it 5 hours much less 5 years.
Mila is into everything ‘rainbow’. She loves Rainbow Dash from My Little Pony. I decided to be brave and try my hand at baking and cake decorating for the first time. I didn’t think I could do it but with a few YouTube videos and online tutorials, I pulled off baking my first rainbow birthday cake. I wish I could have captured the look on Mila’s face when she saw the rainbow inside the cake. It was priceless and worth every bit of the effort I put into making it for her.
The icing work looks very amateur but that’s how we all start, right? The top is made from gum paste and I watched this video from Krazy Kool Cakes and Designs on how to do it. It was very straight forward and easy for a beginner like me. I couldn’t get the clouds quite right but it still looked like clouds at the end (haha).
For the actual cake I watched a really simple video from MyCupcakeAddiction. She made it look so easy and by following each step, I was able to mimic it without any trouble.
It didn’t turn out perfect but baby girl loved it and that’s all that matters. I am not sure cake decorating is the thing for me but it’s good to know, I can do it if I ever want to.
